Cheap keto groceries
I lost my bank card last week. And my bank is in another state. That was a very frustrating day, lemme tell ya. In the end, I decided to open a local bank account, but I still have very limited access to funds. I used the last of my veggies yesterday, and I was completely out of lunch and dinner meats. I really need to do a big shopping trip, but for now, I just needed to make sure I had the necessities so that I wouldn't have to resort to eating out (which I definitely can't afford with no access to my bank).
So I ran to the store tonight and picked up a few necessities to keep me on track. Of course I bought tons of veggies, and a few kinds of meat, and some eggs. That's pretty much it, and I should have food in the house for a week (in case it takes another week to get my new bank card).
I grabbed a giant bag of green beans, some snow peas, avocados, tomatoes, and a couple large cucumbers. Like wrapping lunch meat around cheese, but I have been out of lunch meat for awhile, so I picked up some of that, also. I had the bright idea to make quick and easy corned beef and cabbage with cheap canned corned beef, just tossing it all in a pan with some bacon grease or olive oil. Of course I couldn't find any cabbage, but the corned beef is canned, so I can leave cabbage on my big shopping list. And I got some skinless, boneless chicken to cook up ahead of time. That makes dinners much simpler and less time consuming.
The faster, easier, and cheaper my food options are, the more likely it will be that I stick to keto on any given day. Any time it's not easy to just grab and go, I tend to slip, and my body HATES me for it. I feel awful this evening because I didn't bring a lunch, and I talked myself into getting taco bell. Just never a good idea. My entire body is cramping and painful from trying to process all those carbs.
So, I'm going to go put my lunch together for tomorrow. It will be nice to feel better after I spend the day eating right.
