Mornings

I am busy. I work more than full time. I live alone with a dog, and a companion a couple days a week, both of whom I clean up after. There is no one to share chores with. I also have a lot of hobbies, and spend as much time as possible at the gym and with friends. So I struggle with having enough time to prep my meals. My goal with meal prep is quick, easy, and delicious.

A little over a year into this lifestyle, I finally got sick of salads every single day (but hey, the fact that I enjoyed salads for a whole year is pretty friggin impressive). I was at a loss for a minute as to what I could throw together for lunches. But I finally realized that finger foods were perfect for my routines. There's an endless variety to choose from, so I don't end up eating the same thing for months on end, and I can eat while I drive if necessary (which happens often).

Today's lunch consists of fresh green beans, avocado, hard boiled eggs, and string cheese. I don't have to eat and drive today, so I can peel the eggs and scoop out the avocado with a spoon. I will also bring an orange, a protein shake, and mixed nuts for a snack.

One of the beautiful things about this lunch is that I was able to throw it together in just a few minutes while I cooked my standard breakfast of eggs and sausage (I usually have bacon when my companion is visiting, and sometimes I get fancy with omelettes or just mixing in other meats and veggies with my eggs... but most days, it's just sausage). I threw my eggs on to boil while my breakfast cooked, turned them off when my breakfast was done, and cooled them off while I got dressed. I cut up my avocado and rinsed the green beans while the sausage cooked, and boom, lunch is made without adding extra time to my morning routine.

My hope with this blog is to share my ideas for keto friendly meals that fit into a tight budget, of both time and money.  I hope you find it helpful.
